How to Make Wine from Juice
Throughout history, wine has been made not only from just grapes, but from a wide variety of fruits. In fact, almost any variety of fruit can be turned into wine, and it's quite simple to create at home. Making wine is a great way to use up extra fruit that you may have on your backyard trees, and bottles can make wonderful, personal gifts that you can give year-round to your friends and family.Most cities have specialty shops that sell wine and beer making supplies. There are also a number of online retailers that offer everything that you need to get started. For a basic wine, you will need:
3 gallon plastic, primary fermentation container
Campden tablets
Sieve or cheese cloth
Sterilized glass gallon fermentation jugs with airlocks
Smaller glass wine bottles with either cork or screwcap tops
Fruit
Tannin
Citric acid
Yeast nutrient
Wine yeast
Basic Recipe for Fruit Wine
3 lbs fresh fruit
2 lbs sugar
1 Campden tablet
1 teaspoon tannin
1 ½ teaspoons citric acid
1 teaspoon yeast nutrient
1 package wine yeast
Water
Place fruit pulp and juice in plastic, primary fermentation container. Add crushed Campden tablet, stir and cover. Let sit for 24 hours. Add the yeast nutrient and cover. Stir once a day for one week. Strain the must through a sieve or cheese cloth. Place liquid in glass fermentation jug and seal with airlock. Let sit for two to three weeks. Siphon wine into wine bottles and seal. Let sit in a cool, dark location for three months. Pour the wine into clean bottles and seal permanently. Some wine will be ready for consumption at this point while others will benefit from some ageing.
