Mead Honey Wine-How To

Wine made from honey, also known as Mead, probably conjures up for most romantic images fit for a renaissance festival. But, the beverage has a history that actually dates all the way back to 1700 BC when the Greeks considered it their drink of choice. Mead became hugely popular throughout northern Europe centuries later, and it became a favorite of royalty. Its demise was predominately a result of the reformation of the Church. Protestant clergy didn't appreciate the number of beeswax candles used in Catholic churches. Thus, beekeepers were put out of business, and the production of honey decreased. This drove the price of Mead above what the average commoner could afford.

In modern times, Mead has acquired a somewhat cult following and remains a popular beverage in Poland and Russia. It is also the wine used in Wiccan and Pagan religious ceremonies.

The recipe for Mead is simple, but the wine will need to age for a lengthy period of time to reach its full drinking potential. Here is the most basic recipe for Mead.

Basic Mead

10 lbs of clover honey
1 can concentrated white grape juice
5 gallons hot water
5 grams of Champagne yeast (found in wine supply stores)

Dissolve Champagne yeast in hot water. Add honey and grape juice concentrate. Stir and cover. Let sit overnight. Pour into primary fermentation container and let sit for 3 months in warm, dark location. Pour into wine bottles and cork. Let age for at least one year before drinking.
