Cabernet Franc
Cabernet Franc is actually one of the genetic parents of Cabernet Sauvignon. The other is Sauvignon Blanc. Both Cabernet varieties are among the five major grapes of the Bordeaux region in France. Cabernet Franc is a bit like a milder version of Cabernet Sauvignon. Cabernet Franc is fruitier, less acidic and less herbal in taste.There are two distinct styles of Cabernet Franc. The first comes from France's Bordeaux region and this type is usually aged in oak barrels to tone down the fruity flavor. It also adds a hint of spicy, oaky flavor. Virtually all other Cabernet Francs are fruitier and juicier tasting. Their flavors include raspberries, cherries and strawberries. The most notable Cabernet Franc outside of Bordeaux is a wine made in the Loire Valley named Chinon.
Cabernet Franc goes great with most vegetables and especially stronger tasting vegetables like zucchini. Be warned though, bland tasting vegetables like boiled cabbage will not mix well with Cabernet Franc. Despite this, Cabernet Franc is a popular wine for vegetarians.
